That sounds wrong to me.
The problem is that the game hangs before the message sent to the server to say "this Pokemon has been caught" gets there. So then when you get back into the game the server doesn't know you caught that Pokemon so it's as if you didn't. What you see on screen doesn't matter; what info gets to the server is the important bit. Killing the app and stopping your phone's connectivity isn't going to help with that.
What did work for me was waiting it out. Mine froze on a high level Jynx so I just stood there until I got connectivity back. She wasn't caught but she was still there and I was able to continue throwing balls (and catch her).

Waiting it out makes sense, though, if only to find the Pokemon again. I'm going to have to try that. Thanks!

Yeah that seems to be the best option because the pokemon should hopefully still be spawning in the same area if you are fast enough at rebooting the game!
